10、kitchenministry:OnDecember31,2022FM2022|PES2022|FIFA扩展阅读：某餐饮厨房部年终总结范本某餐饮厨房部年终总结范本时光荏苒，2022年很快就要过去了，回首过去的一年，感慨万千这是我第八次写职位年终工作总结。今年整个北京市场物价迅猛上涨，人员成本同时也不断上升，在集团的大力管理培训和大家的共同努力下，同期工作比2022年有所改善。现将主要工作总结如下：一、厨房营业情况二、部门营业情况三、厨房管理方面1、年厨房人员调整。一次是中关村店与圆明园店副厨对调，另一次是月份筹备西二旗店，人员综合调整以老带新，圆明园店上什主管调西二旗，并新加入一名上什主管，其

11、他部门主管都是年带入北京的主管。2、厨房年初针对各部门做了一套以部门为单位的自查工作签字流程，使原来准备工作不齐全的全补上来，厨房得到了明显的改善。3、年月建意店里用直销法每人吃鱼送鱼，使店里水煮鱼在原来的基础上流水最高达到30万元一月，同比年、年、年取得了历史性的突破，同时水煮鱼的毛利一直控制在76%78%之间。4、厨房今年利用一分钟定位法管理，对厨房冰箱和所有货物定位处理，万城店和马甸店在我的影响下取得了良好的效果。5、顺义店新开业筹备交流和综合管理大培训。厨房积极参与并学习贯彻落实，特别是对厨房后勤难管理上下功夫，员工宿舍进行了规范，取得了好成绩，没有人不夸厨房的宿舍卫生干净。6、学习了

12、各项流程学，通过厨房自己摸底考试三次，店里组织二次，集团一次，把理论变成实际操作。7、今年物价涨幅太大，如厨房干辣椒原来3元多/斤涨至10元/斤，花椒也涨到25元/斤，经过厨房重点调整对水煮鱼毛利没有影响。四、厨房存在的问题1、由于今年设备老化，冷库、抽风老化，维护和管理上耗费不少，表明我们厨房还需增强工作意识。2、对怎样做员工思想工作还需要总结学习。3、在强化厨房的学习氛围方面做得不够。4、在强化厨房对防止中工流失工作做得不够完善。五、年的设想与工作安排1、为明年迎接奥运做好准备工作，通过学习再造、培训与管理好团队。2、对厨房进行有效监控与指导，严格按标准提高执行力。3、通过专业化培训与管理，对厨师技术力量进行合理储备，合理推出新颖菜品。4、对厨房环境、卫生、设备进行安全维护，同时对成本及费用加以控制。5、将每月工作计划与每日工作日志加以落实。6、沟通-管己、管人、管队伍。新的一年意味着新的起点、新的机遇、新的挑战，我决心再接再厉，努力打开一个工作新局面。第 5 页 共 5 页
