18、的厨艺培训和讲解，并常常鼓励他们把工作看作是自己的事业。经过努力，员工整体素养得以提高，如注意仪表、遵守厨房规章制度等。三、质量方面：自助餐菜肴出品质量是西餐厅得以生存进展的核心竞争力。作为厨师长，我严把质量关。做菜出品时严格根据标准执行，确保每道菜的色、香、味稳定；我们还仔细听取厅面员工意见及来宾反应，总结每日出品问题，准时改良缺乏； 四、卫生方面：严格执行食品卫生安全法，仔细抓好食品卫生安全工作，把好食品加工的各个环节。按规定，每个员工都必需对各自的卫生区负责，同时，由我进展不定期检查；其次，规定食品原料必需分类存放，分别处理，厨房用具也必需存放在固定位置；也仔细听取你们给我们的意见。我们

19、利用一切可以利用的力气，确保食品质量、卫生安全，防止顾客投诉和食物中毒，造成不必要的后果。 五、本钱方面：在保证菜肴质量的状况下，降低本钱，把铺张减低到最小程度，让利顾客，始终是我们追求的一个重要目标。作为厨师长，我也总结出一些降低本钱的新方法。 1、把握库存状况，坚决执行“先进先出”原则，把存货时间较长的原料尽快销售出去。2、研制无本钱菜品，把主菜的剩余边角料做成托式菜品，以降低本钱；如牛肉的边角料，我们把它制成肉酱和咖喱牛肉等等。 3、还让每位员工都知道自己所用原料的单价，每日估算所用原料的价值，这样就把本钱掌握落实到每个员工身上，使全部厨房员工都关怀本钱、了解本钱掌握。 固然我们也有存在
