3、e a grain that is not grown or even known outside its home area.Now,an ancient grain from Ethiopia teff,is appearing in America.Teff has been an important part of the Ethiopian diet for thousands of years.Like oats,rice and wheat,it is a cereal(谷类的) grass.Teff is known for its small grain.It is used
4、 mainly to make flour(面粉)Teff has mild and earthy taste.Teff flour is the main thing for the wellknown flatbread found in Ethiopian restaurants.Wayne Carlson learned about teff while doing public health work in Africa in the mid1970s.In the late 70s,Wayne returned to the US,married and settled in so
5、uthwest Idaho.Then he came up with an idea to grow teff in his home state.Wayne and his wife Elisabeth are not farmers;nor do they want to be.So they convinced actual farmers in Idaho,Oregon and Nevada to grow teff for them.The Carlsons milled(碾磨) it themselves.Until last year though,there was not a
6、 single Ethiopian restaurant in the entire state of Idaho to buy the milled flour.And that is how the business slowly grew for many years,serving the Ethiopian and Eritrean community in the US.Wayne says teff production has increased over the past decade in the US.The grain has gone from 1,200 hecta
